High in the Andean foothills of Tolima, Emmanuel Enciso tends the land with patience at La Roma Farms. Through the Black Condor Project, he and neighboring farmers have transformed steep volcanic slopes into thriving regenerative agroforestry systems, where coffee grows alongside plantain, guava, cedar, and native shade trees. These living canopies protect the soil, invite pollinators, and restore the mountain’s natural rhythm.

Each cherry is handpicked and washed with precision, then dried slowly in the cool, misted air of the valley, a process guided by both science and intuition. The cup opens with notes of dried plum and toasted hazelnut, unfolding into cocoa nibs and gentle red-apple acidity. A comforting, well-balanced coffee that bridges sweetness and structure, a true reflection of the mountain’s quiet harmony.

Life on the Farm

Our days begin with the first light, not an alarm. We drink warm water, step outside, and walk with the animals while the sun rises. It is a calm beginning, far from the years of traffic, offices, and drinking coffee only to survive another day.

Morning chores follow. We feed the animals, refresh their water, and move them to new grass. The pace is slow and grounding. When the work is done, we make a simple breakfast from whatever the garden has given us. Only then do we make our first coffee of the day.

The rest of the day is shaped by small tasks around the farm, moments of quiet, and time spent observing the land. As the sun sets, we bring the animals in, prepare dinner, and end the day with the same sense of peace with which it began.
